Hook Ya Sunshine Herb Tomato Salad- Salt Free

Five ingredients, five minutes of prep and a 30-minute chill: that's all it takes to turn a pint of grape tomatoes into the brightest side dish on the table.
This Sunshine Herb Tomato Salad is the kind of recipe you make once and then keep coming back to all summer (and honestly, all year in Florida). Sweet grape tomatoes, sharp shallot, tangy red wine vinegar and a little olive oil get pulled together by Hook Ya Sunshine Herb seasoning. A short rest in the fridge lets the tomatoes soak up the vinegar and herbs, so every bite tastes like it was marinated for hours.
Ingredients
Serves 4 as a side · Prep 5 min · Chill 30 min
- 1 pint grape tomatoes, cut in half
- 1 shallot, finely minced
- 2 teaspoons Hook Ya Sunshine Herb seasoning
- 3 tablespoons red wine vinegar
- 1 tablespoon olive oil
Instructions
- Prep the tomatoes. Rinse the grape tomatoes, pat them dry and slice each one in half lengthwise. Add them to a medium mixing bowl.
- Mince the shallot. Peel the shallot and mince it as finely as you can so it blends into every bite. Add it to the bowl.
- Season. Sprinkle in 2 teaspoons of Hook Ya Sunshine Herb, then pour in 3 tablespoons of red wine vinegar and 1 tablespoon of olive oil.
- Mix. Toss gently until every tomato is coated.
- Chill. Cover the bowl and refrigerate for 30 minutes so the flavors meld.
- Serve. Give it one more stir, spoon it into a serving bowl and enjoy.
Tips and serving ideas
- Make it ahead. It holds well in the fridge for a day, and the tomatoes only get more flavorful.
- Add a drizzle. An extra splash of good olive oil right before serving makes it even richer.
- Pair it with the catch. Serve it alongside grilled or blackened fish, shrimp or chicken. It's a cool, bright contrast to anything off the grill.
- Top it. Spoon it over toasted bread for a quick bruschetta, or over a bed of greens for a light lunch.
Pick up Hook Ya Sunshine Herb and make this one tonight. One bite and you're hooked.
