This was so easy and so damn good! It took 15 min to prep and another 15min to cook. The aromas through the home were so fragrant. This fed our family of 5. Make your side of choice, but yellow rice went so well with the flavors.
1 tbsp Dat'l Hook Ya sauce
Dat'l Hook Ya blackened seasoning
1 pint grape tomatoes cut in half
3/4 cup thinly sliced shallots
2 tbsp of fresh minced garlic
1 tsp lemon zest
1/2 cup white wine
2 pounds of fish of choice
5 tbsp butter
- Liberally coat fish with Dat'l Hook Ya blackened seasoning.
- Bring a large pan to high heat and then add 4 tbsp of butter
- Add the fish to the hot pan and blacken each side until fish is cooked
- Remove the fish and set aside
- Lower heat to medium and add in 1 tbsp of butter and the shallot. Cook 1 min and stir mid way
- Next add the tomatoes and cook 4-5 min or until they blister
- Add the garlic and cook 1 min
- Raise the heat to high and add the white wine, lemon zest, and Dat'l Hook Ya sauce. Add more Dat'l Hook Ya sauce if you want more spice.
- Reduce the white wine 2/3 of the way. Take off heat and place on top of the fish.
