Dat'l Hook Ya Chicken Lollipops

No fancy setup today. Just good times for a last minute barbecue. These chicken lollipops came together absolutely amazing. Some waffle fries and fried snapper were an awesome side.

Who knew in such a short time You could develop such deep flavors. Look up a YouTube video and how to make a chicken lollipop. You essentially cut down 1 inch from the knuckle in a 360 degree circle, then peel back off the top skin. Then the remainder meat push down to compress. This keep it so juicy!

Next for the marinade

 

  • Half gallon water
  • One cup brown sugar
  • Half cup Dat'l Hook Ya blackened seasoning
  • One garlic head (do not peel just chop it up into small pieces.)
  • Four tablespoons Ginger
  • 2 cups soy sauce

 

Mix the brown sugar in warm water (like a super hot shower temp) and mix to dissolve. Add in all other ingredients and stir. Add in some ice cubes to cool the water. Marinade the chicken lollipops 3 hours in the fridge. And don't worry about the floating garlic skin, nothing will stick at the end :-)

Preheat grill to 325-350. Remove chicken lollipops from marinade, pat dry and season with more blackened seasoning until coated.

Placing on a grill rack is most ideal about 3 inches above the grates. Close and cook 45min until done. Each grill is different so taylor to your needs.

All the flavors come together so well! And people will love the look and juicy meat. Add choose either sauce over the top for added kick.
