Dat'l Hook Ya Blackened snapper over a bed of coconut rice topped with diced mango and avocado with a side of Asian slaw.
We made this prep and cook in 20 min total but the flavors tasted incredible! Everything comes together as a complete bite. The fresh sweet mango pairs with the sea salt in the seasoning on th fish backed by a creamyness from the avacado, so yummy!
Ingredients and cooking is the most simple we've ever done. No measuring just cook!
Ingredients:
- Dat'l Hook Ya blackened seasoning
- Fish of choice
- Mango
- Avocado
- Jasmine rice
- Sweetened coconut milk
- Asian salad kit from store
- olive oil or butter for blackening the fish
- optional toasted sesame seeds
- Lemon juice
Buy enough for how many you are cooking for
Start cooking the rice. For the liquid required to cook the rice, use half water half sweetened coconut milk
While the rice is cooking, season the fish with Dat'l Hook Ya blackened seasoning. Place a pan on medium high heat and preheat 3-4 min.
While the pan is getting hot slice the avocado and dice the mango. Next mix the Asian salad kit in a bowl. Set aside.
Once the pan is hot, place in the butter or olive oil and put in the fish. Cook each side until a nice blackened color.
By this time the rice is near done.
Place the rice onto a plate, place the fish on top of the rice, splash of lemon juice on top of the fish, put the mango and avocado on the fish. Place the Asian salad on the plate. To really get a nice pop of crunch and flavor, sprinkle toasted sesame seeds over the entire dish.
