Dat'l Hook Ya Blackened Shrimp in a Tomato, Shallot and Bell Pepper Sauce over Jasmine Rice

This is a fairly simple recipie with easy prep that will bring a ton of flavor. The slight sweetness of the shallots and bell peppers paired with the brightness of the lemon with a back drop of the white wine brings complex yet delicate flavors. The blackened shrimp and sauce over the jasemine white rice makes each bite so incredible. Meal takes 15 min to prep, 20 min to cook. Feeds 2-3

 

1 pound peeled and deveined shrimp

1/2 Red Bell Pepper - cut into length wise strips about 1/4 inch wide

1/2 Yellow Bell Pepper - cut into length wise strips about 1/4 inch wide

3 Shallots - cut into length wise strips about 1/8 inch wide

5 cloves garlic Minced

1/4 cup White Wine

1 tsp all purpose flour

2 tsp of Better than Bullion chicken broth concentrate mixed into 2/3 cup water

Dat'l Hook Ya Blackened seasoning

1 tbsp Dat'l Hook Ya Sauce

2 tbsp fresh Basil Chopped

2 Green onions chopped

8oz package of fresh Grape tomatoes

Olive oil

Jasmine rice

2 tsp lemon juice

Salt and pepper

 

Cook 3 servings of Jasemine rice per package instructions. 

Bring a large pan with atleast 2 inch walls to high heat. While the pan is heating, liberally apply the Dat'l Hook Ya blackened seasoning to both sides. Once pan is hot add 3 tbsp or more of olive oil to pan and add the shrimp. Cook the shrimp half way, usually no more than 1-2 min. We will finish cooking them in the sauce later. Remove the shrimp and add the tomaotoes. Cook for 5 min on high heat stirring frequently so it doesn't burn. You will get a nice brown look on some of the skin. This process brings out the natural sweetness.

Next add the shallots and cook 2 min white still on high heat. Add the bell peppers next and cook 4 min. Remember to stir frequntly. While the peppers are cooking, mix the Better than Bullion chicken broth concentrate and flour into 2/3 cup of cold water. 

Once the Bell pepper has cooked 4 min, add the garlic and cook 1 min. Add the white wine to deglaze the pan. Make sure the white wine is reduced by half at least. Next add the chicken broth/flour mix and bring to a simmer, once at a simmer, reduce heat to medium low. Add 1-2 tbsp of Dat'l Hook Ya sauce. This is depenedent on your heat level you are looking for. Cook 2 min.

Next add 1-2 tsp of lemon juice to your taste. Add in the shrimp. Add the basil and cook 2 min. Add salt and pepper to taste if required. 

Thicken the sauce to your liking. Place the rice on a plate, add the shrimp and sauce over top and garnish with green onion. You are going to enjoy this one!
