Dat’l Hook Ya Pinot Grigio Lemon Butter Garlic Sauce with Blackened Fish Over Orzo With Snap Peas & Basil Cherry Tomatoes

This is a very easy dish to put together that brings vibrant flavors of basil,  lemon, garlic, butter, pinot grigio with a crisp bite of snap peas and cherry tomatoes. The bold flavors with the different texture levels bring a true culinary experience that you swear was made in a high end restaurant.  Serves 4 and takes 35min to make

1.5 cups Pinot Grigio

1.5 Tbsp Dat’l Hook Ya Sauce

Dat’l Hook Ya Blackened seasoning

1.5 pounds of Fish Filet of choice

1 pint Cherry Tomatoes cut in half

5 tsp of fresh chopped Basil leaves (do not use dried or basil paste)

2 whole Lemons

4 cloves Garlic minced

16oz Orzo Pasta

16oz whole Snap Peas

1/4 cup Ghee (clarified butter)

Prep the tomatoes first as they need to be cold and marinade in the flavors for the best taste. In a bowl add in the cherry tomatoes that were cut in half, 1 tbsp fresh lemon juice, 1/2 tbsp Dat’l Hook Ya sauce, 1/2 tsp fresh chopped basil, 1 clove of minced garlic, 1/4 tsp lemon zest and mix evenly. Place into the fridge.

Make the orzo pasta per the instructions to make it al dente and set aside. Save 1 cup of pasta water.

Season the fish with Dat’l Hook Ya blackened seasoning. Bring a medium large pan to high heat and add in half the ghee. Blacken the fish, remove and set aside. Reduce the pan to medium heat.  Add in the remainder ghee to the same pan and then add in the snap peas. Cook 2 min. You want them to stay crisp, don’t over cook the peas. Add in 3 cloves of minced garlic and cook until fragrant, about 1 min. Add in the 1.5 cups of pinto grigio and reduce for 4-5 min or until the alchol is cooked off. Next add in zest from 1 lemon and the juice from 1 whole lemon. You should have a nice loose sauce with the alcohol cooked off. If you over reduced and do not have enough sauce for 4 plates, add in some of the saved pasta water until you have enough.

Portion the orzo onto 4 plates. Next place on the orzo the snap peas, tomatoes and fish. Pour the sauce over the fish and the pasta. Garnish with fresh chopped basil and enjoy another gourmet meal at home.
