White Wine Lemon Garlic Butter Shrimp Scampi

This is a second version of our shrimp scampi that is more elevated than our first one. This recipe brings out more of the lemon garlic flavors and makes every bite mouth watering. Dish is for 2 and takes around 35min to make

1 Roma tomato (diced)
8oz Broccoli (Cut into 1 inch bite size pieces)
1 Lemon (zested and quartered)
2 cloves Garlic minced
6oz Spaghetti/ linguini
3/4 pound Shrimp (Deshelled)
3 tbsp Grated Parmesan (avoid the bottle stuff here)
1 tsp Dat’l Hook Ya Blackened Seasoning
1 tbsp Dat’l Hook Ya sauce green label
1/4 cup Seafood stock (can substitute chicken broth)
3 tbsp Butter
4 tbsp Avocado oil

1 cup Pinot Grigio

Bring a pot of water to boil and cook Spaghetti per instructions and then set aside. Preheat an oven to 450 degrees. Add broccoli to a bowl and then add 2 tbsp
avocado oil. Toss until evenly coated and place on a baking sheet. Bake in the oven 13 min.

While the broccoli is baking, make the butter sauce. Soften the butter in a microwave then add 1.5 tbsp parmesan cheese, the Dat’l Hook Ya Sauce, a pinch of garlic and all the lemon zest. Mix and set aside.

Season the shrimp with Dat’l Hook Ya blackened seasoning and bring a large pot to medium heat. Once the pot is hot, add 2 tbsp of avocado oil and then add the shrimp. Cook about 3 min or until shrimp meat is nice and white. Do not over cook the shrimp. Remove the shrimp and set aside.

Deglaze the pan by adding the white wine and cook until reduced by half, around 3 min. Add in the cooked pasta and stir. Next add in the remainder garlic and mix. Now add the butter mixture, seafood stock and mix.  Reduce liquid until its reduced sauce and not watery. It will look like very little sauce but the flavors will be coating the pasta. Again, you don’t want it watery and will reduce until it looks like almost all gone. Stir frequently to let the sauce cover the pasta and get the flavors in. Add in the shrimp, broccoli and mix. Place into a bowl, garnish with the diced tomato and grated parmesan cheese, squeeze lemon to taste and enjoy another fabulous meal!
