Dat’l Hook Ya Sushi Spicy Tuna Cucumber Taco

A Hook Ya catch and cook that you have to try. We will be honest, making the shell took some practice but we finally got it. This is a great video on how to make a nice sheet from the cucumber https://www.youtube.com/watch?v=INdbmef_VL4  . Our only change to the video is take the skin off first so you can use the first part of the sheet. Get nice fat and round cucumbers for best results.

We made this for a Sunday @jaguars games and it was an absolute party hit! The unique presentation, textures, and flavors had everyone going back for more and more.

1 pound sushi grade tuna cut into ¼ inch pieces

4 tbsp Dat’l Hook Ya sauce (add more if you want extra heat)

1 tbsp mayo

1 tbsp sesame seeds

1/3 cup panko

1 whole green onion chopped

1 tsp sesame oil

2 tbsp oyster sauce

1 tbsp soy sauce

1 cup sushi rice cooked (requires rice wine vinegar, salt, sugar)

6 large cucumbers

1 avocado sliced

5oz seaweed salad

Cook the sushi rice per instructions and set aside. Bring a small pan to low medium heat and add in the sesame seeds. Move around frequently and toast until a very light brown color, about 2 min. Remove from pan and set aside. In the same pan add the panko and toast until light brown, again about 2 min. Set aside.

In a cold bowl mix the diced tuna, Dat’l Hook Ya sauce, sesame oil, toasted sesame seeds, mayo and chopped green onion. Mix and place into the fridge to marinade and get flavor as you continue.

Follow the youtube video to make the cucumber sheets. Take a small bowl or a cup that is around 4 inch diameter and cut out circle patterns as your shell. This part takes practice!

Into a small sandwich bag add in the oyster sauce and soy sauce, mix and set aside.

Time to build. Fill the cucumber taco shells with all the solid ingredients. Once they are filled, cut the corner of the sandwich bag so it’s a small hole and drizzle on the sauce. Then top with the toasted panko.

Once you master the skills, this is going to be a favorite!
