Dat’l Hook Ya Fried Shrimp Patty with a Pineapple Salsa

Best ever Fried Shrimp Burger with Pineapple Salsa. You know we like to get creative with our cooking. We had some fresh pineapple growing and some fresh caught shrimp so this was a combo made in heaven! And the crust….OMG! You’ll be making this a lot. The crushed club crackers give the most perfect tasting crust. The shrimp is seasoned with our medium heat Blackened seasoning for that perfect bite. The salsa with the sweetness of the pineapple, hint of lime and tequila just send it over the top! Makes 3 patties

1 Bell Pepper diced

1 Large tomato diced

1 Red onion diced

Tequila

1 Fresh lime

2 cups diced fresh Pineapple

1 sleeve regular Club crackers

1 pound shrimp

1/2 tbsp medium heat Dat’l Hook Ya blackened seasoning

3 potato buns

Corn starch

1 egg beaten

Peanut oil

Salt

Chop the cleaned shrimp into 1/4 inch pieces and season with the Dat’l Hook Ya blackened seasoning. Mix until uniform. Spray a cookie sheet with cooking spray and make three uniform patties about 1/2 inch thick. Place into the freezer for 2-3 hours or until frozen. While the shrimp is getting cold, place the diced pineapple, tomato, bell pepper, and red onion into a bowl. Add a splash of tequila and salt to taste. Mix and then add in the juice from the lime. Mix again and place into the fridge.

Once the shrimp patties are frozen, lightly dust them with corn starch and then dip both sides into the beaten egg. Crush the club crackers as fine as you can in a Ziploc bag and then evenly coat the shrimp patties. Heat peanut oil to 325 degrees and make sure the peanut oil is a minimum of 2.5 inches deep. If too shallow, the patty won’t cook evenly. Fry until all sides are golden brown. You may need to flip it a few times while frying. Place the shrimp patty on a potato bun and top with the pineapple salsa.
