Dat’l Hook Ya Pork Bowl with Corn

1/2 cup Jasmine rice

1 lime quatered

2 tbsp Mayo

1 can Corn

10oz ground Pork

1/4 cup beef stock

1/4 cup Monterey Jack cheese

1 Poblano pepper minced

1.5 tsp Dat’l Hook Ya blackened seasoning

1 tbsp Dat’l Hook Ya sauce

1 green Onion

olive oil

Cook rice per instructions. Drain corn and pat dry. Bring a medium sized pan to medium heat, add in olive oil and then add corn. Cook 5 min or until corn is golden brown with a slight char. Set aside. Mix 1 tsp blackened seasoning and 1 tbsp Dat’l Hook Ya sauce with pork. Bring a medium sized pan to medium heat, add olive oil and then pork. Break up meat while cooking for 4 min. Add in beef stock and reduce to low heat. Cook until sauce is thickened. In a bowl add corn, mayo, half the cheese, half the lime juice, 1/2 tsp blackened seasoning and mix. Place rice into a bowl, add the pork mix, place corn on top, place cheese and garnish with green onion. Squeeze on additional lime to taste. Enjoy!
