Lemon Zest Panko Crusted Datil Blackened Snapper with White Wine Onion Garlic Tomato Pasta

Is your mouth watering yet? This is not very difficult to prepare and makes any fish taste so good!
The sauce:
1/4 cup Olive oil
1 1/4 Cup Grape tomatoes cut into quarters
1/3 cup Diced Onion
1/2 cup White Wine
5 tbsp Butter
2 clove Garlic minced
1 tsp Dat’l Hook Ya Blackened Seasoning
1/2 lemon
Pasta of choice for two
Cook Pasta per instructions and set aside. Bring a medium pan to medium heat, add in olive oil then butter. Once butter melts add onion and cook 2 min. Add in garlic, white wine, blackened seasoning and cook 3-4 min until alcohol is cooked off. Add in tomatoes and pasta mix until evenly coated.
The Fish:
20oz fish of choice cut into 4 inch length
2/3 cup Panko
1/3 cup Parmesan cheese
2 clove Garlic minced
1 lemon zested (same lemon from sauce)
1 tbsp Dat’l Hook Ya sauce
2 tbsp Mayo
2 tbsp melted butter
Dat’l Hook Ya Blackened seasoning
Green onion chopped
Pre-heat oven to 425. Season fish with Dat’l Hook Ya blackened seasoning and set aside. Place panko into a medium sized bowl. Add in melted butter and mix evenly. Add in all other ingredients and mix evenly. Into a 9×9 baking dish add olive oil to coat bottom lightly, place in the fish and then add panko topping onto the fish about 1/2 inch thick. Bake for 20 min. Baking time assumes a 3/4 inch thick filet. Adjust time for thinner fish. Plate with the pasta and garnish with green onion.
