Dat’l Hook Ya Firecracker Meatballs

Tired of meatballs in the same old tomato sauce? Here is a spin on the classic by substituting the pasta with rice and making a delicious homemade tomato based sauce. Get ready for an explosion of deliciousness on your taste buds!

1 Scallion chopped

10 oz ground Beef

3/4 inch piece of fresh Ginger grated fine

1 tbsp Mayo

2 tsp Soy sauce

1/4 cup Panko

1/2 cup Jasmine rice

1 tbsp Sour Cream

1.5 tsp Dat’l Hook Ya blackened seasoning

3 tbsp Dat’l Hook Ya sauce

3 tbsp Avocado oil (or olive oil)

1/4 cup diced onion

2 Carrots

2 roma Tomatoes diced

Preheat an oven to 425 degrees. Start cooking rice per instructions on package. Set aside when done. Slice carrots diagonal about 1/4 inch thick. In a bowl add carrots, 1 tbsp oil, a sprinkle of Blackened seasoning and set aside. In another bowl add ground meat, panko, whites of the scallion, 3/4 tsp blackened seasoning, ginger and mix. Form into 1.5 inch meat balls. Bring a medium sized pan to medium heat, add 2 tbsp oil and add in meatballs. Brown the top and bottom of the meat balls for 1 min each side and place on a baking sheet. In the same pan add the carrots and cook 1 min stirring about every 20 seconds. Do not clean the pan we will use in next step. Place carrots onto baking sheet with the meatballs. Place the baking sheet into the preheated oven and bake 10-12 min or until meatballs are cooked. While meat balls are baking, in the pan the meatballs and carrots were cooked, add the onions and cook 1 min. Add in the tomatoes and cook 3 min stirring frequently. Turn off heat and add Dat’l Hook Ya sauce, sour cream, soy sauce, and mayo. Place rice on a plate, put meatballs on top of the rice, add sauce on top of the meat balls, place carrots on the plate and garnish with scallions. A very tasty dish!
