Dat’l Hook Ya Brunch

Brunch can be made so many ways. Simply adding our sauce and seasoning to your brunch will elevate it to the next level. Here we share our version of brunch, feel free to use it all or modify to your liking. Homemade bagel slider with seasoned fries.

Bagel Dough:

2 cups Cold filtered water (no tap water or super purified. You need some minerals, not the chlorine)

4.5 cups Double zero flour (You will need to order this online. DO NOT substitute any other flour)

1.75 tsp Sea salt

1 tsp sugar

2 tsp Instant yeast

1/4 cup Extra virgin olive oil

cornmeal for dusting

The Seasoned Fries:

1 pound frozen plain french fries

1 cup Pancake mix

2 cups Club Soda

2.5 tbsp Dat’l Hook Ya blackened seasoning

The Sides:

Fruit

Bacon light dusted with Dat’l Hook Ya blackened seasoning

Drinks of choice

Sunny side up eggs

The Slider:

1/2 pound Ground bison mixed with 3/4tsp blackened seasoning

cheese of choice

Bagel Dough: Place all dry ingredients (except corn meal) into a bowl and mix thoroughly. Add olive oil and mix. DO NOT add olive oil with water at the same time. Add cold water and mix. Once mixed it will be a very rough consistency. Remove from bowl and knead. Watch some YouTube videos how to knead dough as its critical to properly knead for 5 min to get the glutens in the dough just right. Add additional water and flour as needed to get a smooth dough. Once proper consistency, spray the inside of a bowl with Pam and add the dough. Spray the dough with Pam as this will keep it from drying out. Wrap in loose cling wrap and place in a bowl. Place into fridge overnight at minimum. Day 3 to 5 are 100% better! Once the dough has rested take a 2 inch ball size of dough and shape into a bagel with using your finger to make a hole. Bring 1 qt of water to boil with 1/4 cup of brown sugar added. Preheat an oven to 425 degrees. Place bagel into boiling water and boil each side for 1 min. Remove from boiling water and place on a cookie sheet that has been coated in olive oil. Baste the bagels in egg whites. Place into oven for 18 min. Remove from oven and spray cooking spray and add your topping of choice such as everything bagel mix. Place back into the oven for 5 min. Remove and let cool.

The Seasoned Fries:

Lightly dust the frozen potatoes with the dry pancake mix. Set it on parchment paper and let it dry. With the remainder pancake mix add the blackened seasoning and mix well. Add club soda to make the batter. Heat peanut oil to 375 degrees that is atleast 2 inches deep. Place fries in batter and coat evenly. Place in oil and fry until golden brown with flipping fries periodically to make sure evenly cooked. Place on a plate with paper towel to soak up excess oil

The Build: Make beef patties about 3 inches and 1/4 inch thick. Pan cook until desired temp and place onto bagel cut in half. Add toppings of choice. Cook bacon your preferred way. Cook sunny side up egg. Assemble plate as in photo and enjoy an extra special brunch!
