Dat’l Hook Ya Pepper & Onion Blackened Fish Sandwich

Most blackened fish sandwiches are with lettuce and tomato. This is a Hook ya twist that will have you making it over and over. Meal for 2

1 tbsp Mayo

1 tbsp Dat’l Hook Ya sauce

1 tbsp Sour cream

1/2 tsp Garlic powder

Dat’l Hook Ya Blackened seasoning

Sour Dough Baguette

1/2 cup shredded Provolone cheese

3 medium sized potatoes

1 yellow Onion

1 Bell pepper

Olive oil

1 pound fish of choice

In a small bowl, mix the garlic powder, mayo, Dat’l Hook Ya sauce and sour cream. Set aside. Preheat an oven to 450 degrees. Cut the potatoes into 1/2 inch wedges. Place into a bowl and drizzle on olive oil until evenly coated but not dripping. Season liberally with Dat’l Hook Ya blackened seasoning and toss until evenly coated. Place potatoes on a baking sheet and cook 20 min or until lightly brown. Next liberally season fish filets with blackened seasoning and set aside. Thinly slice bell pepper and onion. Bring a medium sized pan to medium heat and add in 1 tbsp olive oil. Add in onion and cook until lightly browned, around 7 min. Add in bell pepper and cook until slightly softened but will still have a light crunch. While the veggies are cooking, cut baguettes length wise and brush on olive oil. Place into the oven and toast until lightly brown. Once veggies are cooked remove from heat and set aside. In the same pan add another 1-2 tbsp olive oil and blacken the fish. Place the fish onto the toasted baguettes and top with the onion, green pepper and provolone cheese. Place into oven and remove when cheese is melted. Place onto the plate with the potatoes. Use the sauce as a dip for the sandwich and potatoes. So good!
