Dat’l Hook Ya Low Carb Gluten Free Chicken Parmesan Pizza

Gluten free and low carb does not have to mean no flavor. This pizza crust is made from chicken and with homemade crispy crumbs with a homemade sauce brings your palette to another level of flavor.

The Sauce:

28oz can San Marzano tomatoes

1/4 cup Olive oil

6 Cloves garlic

1 medium onion

6 Leaves fresh basil

1/2 cup Dat’l Hook Ya green label (add more if extra spice is desired)

Finely chop onion, garlic and basil and set aside. Put the tomatoes into a food mill with the medium size grate and process. You can substitute with a blender on pulse mode and do a fine chop, don’t purify. Do not put onion and garlic into the blender! Heat olive oil in a medium to large pan on medium heat. Do not use a pot, you want the sauce to cook over a wide surface area to maximize flavors. Once hot add the onions and cook until clear, about 3-5 min. Add in garlic and cook until fragrant about 1 min. Add in tomatoes, basil (rub basil in your hands to release the oils) and Dat’l Hook Ya. Cook uncovered on low heat for 20 min. Do not cook too high heat as it will splash a lot and get the sauce too thick. Once cooked put back into the food mill or blender. If using a blender, only do slight pulses and DO NOT over blend as you want it chunky. Enjoy on your favorite dish where you need marinara.

The Crust:

1 pound ground Chicken

2 tsp Dat’l Hook Ya Blackened seasoning

3oz package Pork rinds

1 tsp Italian seasoning

2 tbsp Bobs Red Mill Gluten Free All Purpose Baking flour

2 eggs

1/4 cup Parmesan cheese

4oz shredded Mozzarella Cheese

Mix the ground chicken with the seasoning. Get a 10-12 inch round pan and line with saran wrap. Place chicken into the pan and spread until uniform thickness. Easiest way is to also place saran wrap on your hand to press it evenly into place. Place the entire pan with the chicken into the freezer for 2-3 hours until solid frozen. While the chicken is in the freezer, place the pork rinds and Italian seasoning into a food processor and grind until the consistency of bread crumbs. Remove and set aside. Beat the eggs and set aside. Once chicken is frozen, remove from the pan and on one side of the pizza dust with half the flour. Next coat the pizza with half the beaten egg then spread evenly with half the crumbs and firmly press them into place. Flip the pizza to the other side and repeat the same steps. Place back into pan and then into the freezer for 20 min. Preheat the oven to 425 degrees. Remove Pizza from the freezer, place on a wire rack and bake for 20-25 min or until chicken is cooked. For a crisper crust you can make two smaller pizzas and fry the crust in peanut oil. Once chicken is cooked, place a generous amount of sauce onto the crust, add the mozzarella cheese and sprinkle on the parmesan cheese. Broil until the cheese is golden and bubbly! Enjoy another delicious meal.
