Lots of butter!

Get a cast iron pan hot. Coat fish liberally in blackened seasoning. Add enough butter in pan until the whole pan is covered in a layer of liquid butter. Add fish and cook each side until a perfect blackened color. Add to your sandwich or wrap and enjoy!
