Dat’l Hook Ya Enchilada

Another easy dinner night is in store for you!

1 Roma Tomato

4 tbsp Dat’l Hook Ya sauce

2 tsp Blackened seasoning

1 scallion sliced

1 lime cut into quarters

1 Green pepper diced

10 oz of ground meat of choice

1/2 cup Mexican cheese

1/4 cup chicken stock

6 Flour tortillas

Avocado oil

Preheat oven to 475 degrees. In a bowl add tomatoes, scallion, a drizzle of avocado oil, lime juice from half the lime, and 1/2 tsp of blackened seasoning. Mix and set aside. Add 1.5tsp of blackened seasoning and 1 tbsp Dat’l Hook ya sauce to ground meat and mix. Heat a pan to medium heat, add a splash of oil and add green pepper and cook 3 min. Then add meat and brown the meat until cooked. Place the meat filling on half the tortilla and roll to make an enchilada. Add a light layer of oil to a 8x8inch baking dish and place enchiladas seam down. In a bowl mix chicken stock, 3 tbsp of Dat’l Hook Ya sauce and then pour over the enchiladas. Spread the Mexican cheese evenly over the top. Bake until cheese is melted 5-6 min. Remove from the oven and top with the lime tomato mix. Add additional lime to taste. Enjoy!
