One of our family members is very allergic to all dairy products. This is a wonderful dairy alternative with amazing flavors! It taste like real queso dip! To make it all vegan, use Dat’l Hook Ya Too instead of our original green label. We will admit the texture is not as creamy as the real deal, but my gosh does the healthiness and taste make up for it!
Dat’l Hook Ya Sauce
1/2 tbsp Dat’l Hook Ya Blackened seasoning
4 tbsp Nutritional yeast
2 tbsp Lemon juice
1/2 cup unsweetened Almond milk
1/2 large red Bell pepper Diced
1/4 cup Diced onion
1/3 cup Corn
1 cup Cashews
Boil cashews for 25min, drain and set aside. Ideal is to get corn on the cob, remove husk and grill untill a nice char on the corn. Cut corn off the cob and set aside. Alternative is to use drained canned corn on high heat with a light splash of oil in a hot pan and cook untill slightly brown. Add all ingredients except for Dat’l Hook Ya sauce into a blender/food processor. Blend until a smooth consistency. Add additional unsweetened almond milk if too thick. Pour into a microwave safe bowl and add Dat’l Hook Ya sauce to taste. Use Dat’l Hook Ya Too if you want it vegan. Place into the microwave and heat untill hot. Serve with your favorite chips and enjoy a healthy dairy free alternative queso!
