Dat’l Hook Ya Blackened Chicken Over Loaded Rice & Refreshing Creamy Sauce

That’s a long title for DELICIOUS!!! Just another way for Dat’l Hook Ya to elevate your traditional dinners to another level.

1 bunch Scallions finely chopped (separate the white bottoms)

2 cloves Garlic minced

1 Lime

2 Roma tomatos diced

2 Tsp Dat’l Hook Ya Blackened seasoning

2 Tbsp Dat’l Hook Ya sauce

3/4 cup Chicken Stock

1/2 cup Jasmine rice

2 Chicken Cutlets

2 tbsp Mayo

1.5 tbsp Sour cream

1 lime cut into quarters and zest the skin

1 tbsp Butter

Olive oil

Bring a medium pot to medium heat and melt butter. Add in garlic and 1 tsp blackened seasoning. Cook until fragrant, about 1 min. Add in rice and cook 1 min stirring frequently. Add in chicken stock, bring to boil and then reduce to lowest heat and cover. Cook until rice is tender. Season chicken with 1-2 tsp of blackened seasoning. Bring a medium pan to medium heat and add olive oil. Blacken each side of the chicken about 3 minutes or until cooked internally. While chicken is cooking, in a small bowl mix Dat’l Hook Ya Sauce, mayo, sour cream, a 1/4 tsp of lime zest, and a quick squeeze of lime juice. Once rice is cooked add in the tomatoes, the greens of scallions, remaining lime zest and mix. Place into a bowl and top with sliced chicken and drizzle on the sauce. Garnish with some green scallion. Such a delicious dish!
