Dat’l Hook Ya Blackened Chicken Alfredo- Sauce is homemade, YUM!

An easy dinner to make that packs a ton of flavor that will make your taste buds feel like they are in a fine dining restaurant at home. The homemade alfredo sauce is rich with the right amount of spice, the chicken is moist, and the tomatoes add freshness to balance out the dish. Meal is for 2 and takes 30min to cook. If you have some spare time, for the most flavor, season the chicken and let it sit in the fridge for 1 hour.

2 Chicken Breast

8oz Fettucine pasta

1.5 cups Heavy Whipping Cream

2 cups packed tight Fresh Grated Parmesan (Do not use the bottle stuff!!)

½ tsp Italian Seasoning

4 tsp fresh minced Garlic

2 Roma Tomatoes diced

1 Green onion chopped

1 tbsp Dat’l Hook Ya sauce (add more if higher heat level is desired)

Dat’l Hook Ya blackened seasoning

½ cup butter

Olive oil

Butterfly a chicken breast. Using a meat mallet with the spikey side, tenderize both sides of the chicken. Do not flatten, just enough to tenderize the meat. Liberally coat with Dat’l Hook Ya Blackened seasoning and set aside in the fridge. Ideal is 1 hour for max flavor with the minimum time is to make the sauce. Bring a pot to boil and cook the fettucine per the package instructions and set aside.

While the chicken is in the fridge, bring a medium size pot to medium heat and add in the butter and heavy cream. Whisk for 1 min, cooking for a total of 3 min. Add in the garlic, Italian seasoning, Dat’l Hook Ya sauce, and ½ tsp Dat’l Hook Ya Blackened seasoning. Whisk and cook for 1 min. Add in the parmesan cheese, whisk until melted and cook for 5 min. Once its done, place on the lowest heat setting and cover.

Bring a medium size pan to Medium high heat and add in olive oil until generously coated. Blacken the chicken until cooked, approximately 2-3 min per side. While the chicken is cooking, in a bowl lightly coat the pasta in olive oil and mix. This will unstick the pasta and allow the sauce to evenly coat each piece. Take 1/2 of the alfredo sauce and pour over the pasta, mix evenly and immediately plate. Place the cooked chicken on the plate and use the remaining sauce to coat the chicken and to place again on top of the pasta. Add tomatoes on the top of the pasta and green onion and enjoy a home cooked gourmet dinner!
