Dat'l Hook Ya Reverse Sear Sirloin Kabob's

Get ready for the most juicy, tender, flavorful kabob you'll make! Its not hard to make and the flavors of the datil with some Asian twists will make you crave more. The melody of the veggies with the seasoning and acid bring a brightness to the overall dish. The steak marinade gives the perfect balance of ginger, datil, and other Asian inspired flavors to round off this perfect kabob. Takes about 45 min to prep and feeds 3-4

The Meat:
1 pound Top sirloin filet
2 tbsp Dat'l Hook Ya sauce
3 tbsp Hoisin sauce
1 tsp Sesame oil
1 tsp Black pepper
1 tsp fresh grated Ginger
2 tbsp Soy Sauce
 Cut the steak into 1x1 inch pieces. Place into a bowl and add Dat'l Hook Ya sauce, Hoisin sauce, sesame oil, black pepper, fresh ginger and soy sauce. Mix until evenly coated. Place into the fridge for 30 minutes.
The Veggies:
1 Large Yellow onion
1 large Squash
1 large Bell pepper
8oz Baby bellas
1 tbsp Rice wine vinegar
2 tsp Blackened seasoning
2 tbsp Soy Sauce
Cut the squash into 1/2 inch thick slices then cut into quarters. Cut the yellow onion in half and then cut those into quarters and separate the layers. The bell pepper cut into 1x1 inch pieces. Remove the stems from the baby bellas. Place all the veggies in a bowl and then add the rice wine vinegar, Dat'l Hook Ya blackened seasoning and soy sauce. Mix until evenly coated and let it sit 30 min.
While the ingredients are marinating, get a fire pit going and build a solid coal base. This gives the best flavor. If you do not have a fire pit with a grate, you can use a grill. Once the fire pit is going and it is close to being a solid coal base with minimal flames, assemble the kabobs on a bamboo skewer. 
We will be using the reverse sear method to make the most juicy, tender and flavorful steak. Start the grate about 2 feet above the firepit. This will vary by how hot your pit is. Cook the steak until it turns color, about 3 min and then flip. Cook for another 3 min. Then drop the grate to the lowest level to get that intense heat and sear. Cook for about 1 min and then flip. Remove after the next min and you should have a nice brown outer sear layer. If not, keep going!
If you have a grill, put your grill to about 325. Cook the kabobs for about 2 min, rotate 180 degrees and cook for another 2 min. Remove from the grill. Now get your grill as hot as possible, it will take 10 min or so. Place your kabobs back on for about 1 min each side or until you get a nice perfect sear. 
Remove from heat and let rest 5 min at min. Now go and enjoy an amazing kabob. The flavors are sure to please all your family and friends.
