Dat’l Hook Ya Blackened Fish with a White Wine Lemon Garlic Tomato Basil Sauce

This is an easy recipe for two that takes around 15 min prep and 25 min to cook. The fish is still the star here with the sauce as an aromatic compliment to every bite. The flavors are so fresh and bright. A healthy dinner, especially if you blacken the fish in avocado oil vs butter. This will be a go to for many dinners to come.

20 fresh Basil leaves chopped finely

1/2 cup diced Red onion

4 cloves Garlic finely minced

Juice from 1/2 a lemon

Lemon zest from 1/2 a lemon

1 pint Grape Tomatoes cut in half

4 tbsp Avocado oil

1/4 cup white Wine

1/4 cup Dat’l Hook Ya sauce

Dat’l Hook Ya Blackened seasoning

16-20 oz fish filet of your choice

Start the sauce first to make sure the dish comes out nice and hot. Bring two medium sized pans to medium heat and add in 2 tbsp avocado oil and red onion to one of the pans. Cook for 2 min. Add in garlic and cook until fragrant 30 sec to 1 min, do not burn garlic! Add in the cut tomatoes and Datl Hook Ya sauce mixing all ingredients until evenly mixed. Cook 10 min stirring frequently. While the tomatoes are cooking, add 2 tbsp avocado oil to the second pan, coat the fish with blackened seasoning and add the fish to the pan and blacken. Remove fish from pan when cooked. Back to the sauce, once the tomatoes get soft and blistering add in the basil, lemon juice, lemon zest, and white wine. Cook 2-3 min to burn off the alcohol. Do not let it thicken too much. Place on top of your fish and enjoy such a bright and delicious fish dinner!
