You’ve heard of beer can chicken, now its time to step it up to pineapple chicken! Very easy to make and so tasty.
1 whole chicken
1 Bell Pepper
1 Large tomato
1 Red onion
Tequila
2 Fresh limes
1 Pineapple
Season the outside and inside of the chicken to your desire. We use our blackened seasoning sprinkled over the top. We also inject the chicken with a mix of our sauce and tequila, but this is optional. Once seasoned, set it aside. Cut the outer skin from the pineapple and then slice off the fruit leaving the core and about a 1.5 inch base. Place the chicken over the pineapple core and grill at 375 degrees for 1.5-2 hours until the chicken is cooked. It takes a little longer than usual as the pineapple core keeps the internal temp down. While the chicken is grilling, dice the tomato, red onion, bell pepper, and the pineapple. Mix the red onion, bell pepper and tomato together. Squeeze in the juice from the two limes, add a pinch of salt and a splash of tequila. Mix and let it sit 1 hour. After 1 hour add in the pineapple and mix again. Once the chicken is done, let it rest 10 min, slice and serve with the pineapple salsa!
